If you’re like me, you have some ham saved in your freezer from St. Patrick’s Day or Easter! Ham salad is an easy and delicious way to use your leftover ham! Ham salad is a staple at my grandma’s house because it is satisfying, more fun than regular deli meat, and it only takes a few minutes to throw together.
Plus, it’s nice to have an easy protein on hand. I am sure you could tweak this recipe to be even more light by using a fat-free mayo or plain greek yogurt to combine your salad.
I call this recipe easy, because it calls for ingredients hanging out in our refrigerators most of the time, anyway. If you pulled your ham from the freezer, you can thaw it on your counter for the day or put it in a freezer bag in warm water for an hour or two to thaw.
I used a food processor to chop each ingredient separately because it keeps everything from mushing together. It’s a little bit of an extra step but really important, I think.
Leftover Cooked Ham
Ground Black Pepper
1. Chop ham in food processor until ham is coarsely ground. My leftover ham yielded about 2-3 cups.
2. Place ham into a serving container.
3. Chop pickle and onion source separately in food processor and combine with ham.
4. Add about 1 Tbs. mayo per cup of ham or however creamy you like it.
5. Add about 1 tsp. mustard per cup of ham (I used jalapeno mustard!).
5. Black pepper to taste.
6. Enjoy on crackers, buns, or toast with cheese!
